Expect to see jollof rice pop up on menus. The one-pot dish flavored with tomatoes, onions, and spices in a standout of West African cuisine. Other entrees include squash seed-based egusi soup, and ginger and garlic-scented suya skewers threaded with meat.
4. Everything Ube
This purple yam from the Philippines is big on Instagram due to the vivid violet color it lends to desserts. And, the rise in popularity of Filipino food is making it a staple in the mainstream restaurant scene. Ube puree adds a boost of vitamins, minerals, and a smooth, vanilla-like flavor to already familiar foods. In 2020, you’ll see purple cupcakes, doughnuts, ice cream, macarons, waffles, and more with increasing frequency.
5. Non-Alcoholic Drinks
The New York Times notes that millennials are reducing their alcohol consumption. And some don’t drink at all. So restaurants and bars will offer more options for non-alcoholic drinks.
